We have a UniFi Switch Pro 48 PoE and we want to use it without a unifi controller but when we connect to the switch and change the configuration it is not saved, after a reboot the configuration is restored to default

The Ubiquiti Controller software looks after managing, updating, configuring, and adopting downstream devices. I use a Ubiquiti AP here and keep the controller software on an "always ON" computer.
You need to install the Controller software and the lack of same is causing your update issue.
You can have a small "Always ON" Linux machine to do this. But you do need to use the controller software.
You can run downstream devices without the Controller management in between updates, but updates are not predictable in terms of "when"
